 Near-Infrared Spectroscopy (NIRS) is a rapid and non-destructive analytical technique widely used in the food industry for both qualitative and quantitative analysis. In this presentation, we will discuss the theoretical aspects of NIR spectroscopy, the main signal processing methods, and showcase some applications in foods such as fruit juices, oils, and flours. Additionally, we will demonstrate the use of portable NIR instruments managed through smartphone apps based on cloud infrastructure for food quality control and safety.
