Dialogues on Alternative Proteins: Technologies Transforming Professions

Alternative organizes and promotes the Stati Generali delle Proteine Alternative (SGPA — General Assembly on Alternative Proteins), Italy's benchmark event dedicated to the role of alternative proteins in building a more sustainable, innovative, and resilient food system.

Since 2025, it has been a Content Partner of Cibus Tec and Tutto Food, bringing alternative proteins to the center of the debate at Italy’s major food industry trade fairs, connecting research, industry, and consumers around technological innovation, sustainability, and taste.

Session Overview

Two industrial worlds that previously operated in silos are now coming together around alternative proteins. On one side are traditional food technologies — such as extrusion, originally developed for snacks, cereals, and animal feed, which today serves as the core process for producing textured legume proteins. On the other side is bioprocessing, born and developed within the pharmaceutical sector, which is now finding its path into food production.

In both cases, the technology already exists: what is missing is adaptation, and the hurdles are identical — standards designed for other industries, out-of-scale costs, and non-overlapping skill sets. Two panel discussions will bring together equipment manufacturers and plant operators to understand what is truly needed for this convergence to yield market-ready products.
